I promised some of you a post on Kripta, the cava that everyone who knows anything about cava has tried or at least heard about. If you have not, and still consider yourself to be a cava fan you should promptly continue to read this, and pretend that you have always known.
Agustí Torelló Mata is a producer that wants their cavas and wine to reflect their unique terroir. But it stands quite clear that macabeu is their signature grape, that acts as backbone in their cavas. Fresh and elegant all through the portfolio, also when it comes to the very complex and long aged Kripta. "Kripta is a Cava only for the people that understands and love Cava, it is not for everyone...", Agustí Torelló Mata once told me.
Kripta was created the first time in 1979 by Agusti Torello Mata. His goal was to create a cava that was completely unique, from some of the oldest vineyards in the Penédes. He waited thirty years to promote it, since he initially made it exclusively "for family, friends and great connoisseurs."
Kripta is a Brut Nature and consists of the traditional cava grapes, Macabeu 45 %, Xarel.lo 20 % and 35 % Parellada. It is aged at least 48 months on its lees with a cork and therefore classed as Grand Reserva, resulting in more mature and more complex tones in the flavor and aroma.
But what always strikes me is how fresh Kripta always is, and I have tried a fair amount of vintages now and it goes for all of them.
