A sweet treat to make the cold easier to bear

I know that many of you live in places where the spring has come already or maybe even the summer. But here in Sweden we are still struggling with the snow which is quite unusual this late in March. We still have a lot of snow and the thermometer shows numbers below zero, enoyingly enough. So I thought I'd share a sweet treat with you to cheer you up.. if you need it. Blueberry Muffins

375 g plain flour 1 tablespoon baking powder 165 g brown sugar 125 g unsalted butter 2 eggs 250 ml milk 185 g Fresh or thawed frozen blueberries

Preheat owen to 210 C (415F). Grease or brush to trays of six 125 ml muffin holes with melted butter. Sift the flour and baking powder into a large bowl. Stir the sugar and make a well in the centre. Add the combined melted butter, eggs and milk all at once, and fold until just combined. Do not overmix - the batter should look quite lumpy. Fold in the blueberries. Spoon the batter into the prepared tin. Bake for 20 minutes, or until golden brown. Cool on a wire rack.
