Cava de Paraje Calificado

In July 2017, the new classification of Cava was official, Cava de Paraje Calificado (CPC), and the first 12 vineyards that passed the requirements presented. This new category will show consumers a new top range of Cavas that represents the land and embodies the soul of the earth where the vines grow. The standards are set very high and the production will be very limited indeed.

The rules and regulations

The vineyards used must be a small area with vines that are at least ten years old and naturally inspected and approved by the consejo regulador del Cava.

Grapes: All the nine varieties are allowed: Xarel-lo, Macabeu, Parellada, Malvasia/Subirat Parent, Chardonnay, Garnacha, Monastrell, Trepat and Pinot noir.
Yields: Maximum yield of 8,000 kg/ha (7050 Ibs /acre) and 48 hl/ha (422 imp gal/acre)
Ageing: Minimum 36 months
Style: Brut, Extra Brut or Brut Nature

Apart from this there are only vintage wines allowed and the wine cannot be acidified, but must have a natural acidity level of 5.5 g/l (1 ounce/1 imp gal) (measured in tartaric).

An extra rule set on the producer is that all CPC-vineyards must be owned by the producer or contracted on long-term lease. The reason for this is that the CPC-Cavas must be a hundred percent traceable.

When the hard facts have been settled and the vineyard and the Cava fills all the criteria, the final Cava is set blind in front of a jury of outside wine judges. Here the Cava is tasted and the winemaker gets the chance to explain why this Cava is a clear expression of the terroir and why this vineyard is unique. Some Cavas tried and failed but here below are the first 12 that made it.
